ADVENTURES IN BREWING
Why we love the pour-overs
f you want to taste the subtle, distinct flavors of a specific bean without any of the grit or heavy oils, pour-over is the way to go. The V60 is a classic cone-shaped dripper that yields a crisp, incredibly clean cup of coffee.
A Little Reality Check: If you look up V60 guides online, you’ll find people using stopwatches, pouring in exact geometric patterns and treating it like a chemistry experiment. We don't do that here. This is a simplified, foolproof method that gets you 95% of the results with 0% of the anxiety.
Before we start: Always look at your specific manufacturer’s instructions first. Glass, ceramic, plastic, or metal... they all handle heat a little differently.
For this guide, we're using a versatile setup: the V60 Size 02 (the mid-sized one that makes a perfect single large mug or two small cups).
What you need
- Coffee
- a pour-over brewer
- filters
- a grinder if you're using whole bean coffee
- a kettle, gooseneck is best
- a scale or TBSP spoon
Our recipe
- Coffee: 22 grams (About 3 level tablespoons of whole beans).
- Grind Size: Medium-Fine (Like kosher salt or clean sand. Coarser than espresso, but finer than French Press).
- Water: About 350ml / 12 oz (Roughly 1.5 cups) of hot water, just off the boil.
The paper work
Pop a paper filter into the V60 and set it on top of your favorite mug or carafe. Pour a splash of hot water through the empty paper filter to rinse away any papery taste. Dump that rinse water out of the mug. Toss your coffee grounds into the filter and give it a gentle shake to flatten the coffee bed.
The bloom
Pour just enough hot water over the grounds to get them thoroughly wet (about a quarter-cup, or just eye-ball a slow splash that covers everything). Watch it bubble and rise for about 30 seconds. This bloom lets the coffee wake up so you get a good brew.
The main pour
Slowly pour the rest of your water right down the center, moving outward in small, lazy circles. Don’t pour all the way up to the very edge of the paper... just keep it focused on the coffee. Fill the cone up to about an inch below the rim and let it drain, Then add the rest of your water.
THE FINAL DRAWDOWN (in the tune of The Final Countdown)
Give the V60 a gentle swirl right at the end to make sure no grounds get stuck to the sides of the paper. Now, let gravity do the work. The water should drain through completely in a couple of minutes.
Notes
Dialing It In
If your water drains through instantly and tastes weak, your grind was too coarse. Next time, grind it a little finer. If it takes forever to drain and tastes bitter, your grind was too fine. Next time, go coarser. Once you find the right grind size on your grinder, you can do this in your sleep.
How to Drink It
Pour-over tastes incredibly clean and crisp. It’s perfect for drinking black, but if you want to drop a splash of milk in there, go for it. But drink it how you want... there are no rules
